Essence of Australia's South West is a showcase style event held at The Cliff,
Sofitel Singapore Sentosa Resort & Spa. The event featured premium food beverages, tourism and, art from Australia's South West. Guests enjoyed speciality tastings, cooking demos, panel discussions and exclusive masterclasses live in Singapore.

Indulging in the best of Western Australia, with a leading Chef direct from the South West region, plus Winemakers, Brewers, Distillers and experiencing all that the region has to offer.
The event program included interactive participation with Tiller Dining chef, George Cooper, conducting a series of live cooking demos and a Chef’s Table, with a menu featuring produce from Australia’s South West.
The event featured a series of dynamic winemaker panels with some of WA’s premier wineries and wine aficionados. Guests were able to participate in whiskey masterclasses and relax at the pop-up lounge on the breathtaking outdoor deck.

MEET THE CHEF
TILLER DINING
George created Tiller Dining, matching classic ingredients with modern culinary techniques to create food that is both delicious and exciting. He works closely with local growers, foragers, butchers and fishmongers to give guests a true experience of local produce and explains the journey of his life through his storytelling and food.
George’s background in English Michelin plays a big part in his drive, dedication and passion for what has become the most unique and sought after private dining experience in Western Australia.
George will be conducting a series of live cooking demos during the event, with a menu featuring produce from Australia's South West. Guests will be able to secure front row seats at the Chef's Table, being served George's culinary creations side of stage.
MEET THE MC
CHEF AND SOMMELIER
Cyndal is a Chef-come-Sommelier and hopeless romantic of the culinary world. Beginning her Chef's apprenticeship at 15, her career in wine and food began young.

Now, with close to 15 years in the game, she is an Independent Wine Consultant, Event Host, MC and Experience Curator, you will often see her hosting masterclasses, speaking at industry events or curating private-tastings. Now based in Western Australia's Southwest you’ll often find Cyndal buried in a book as she completes her WSET Diploma in Wine.
Cyndal will host a series of dynamic winemaker panels featuring the premier Western Australian wineries and their most celebrated blends.
